I forgot to mention something to my Coach in the SkillsCheck, can I go back to an activity to send them another message?

Yes! You can access the SkillsCheck at any time by clicking on RESUME SKILLSCHECK. Once you are back in the SkillsCheck it is the same as earlier, navigate your way through the activities and send as many messages as you’d like.
